Lenny�s Whiskey Grilling Glaze

Ingredients:

10 Cloves Roasted Garlic (use more garlic if you like)
10 Tblsp Olive Oil
7 � Cups Water
10 Cups Orange Juice
2 � Cups Kikkoman Teriyaki Glaze with Honey &Pineapple;
10 Tblsp Soy Sauce
12 � Cups Dark Brown Sugar
1 � Cups Fresh Squeezed Lemon Juice
10 Tblsp Minced White Onion
10 Tblsp Whiskey (Your favourite kind)
10 Tblsp Crushed Pineapple
2 � tsp Cayenne Pepper

 

Preparation:
To Roast the Garlic

1)
Cut about � inch off the top of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put the garlic into small casserole dish or baking pan, drizzle olive oil over it and cover with a lid or foil. Bake in a preheated 325*farenheit degree oven for 1 hour. Remove garlic and let it cool until you can handle it. (You may also get pre- peeled garlic & roast it in the oven with a little olive oil as a shorter alternative to this preparation.)

Combine water, orange juice, Kikkoman teriyaki sauce, soy sauce & brown sugar in a medium saucepan over medium/high heat. Stir occasionally until mixture boils then reduce heat until mixtures is just simmering.

Squeeze the sides of the heads of garlic until roasted garlic is squeezed out. Measure 2 tsp of sauce prepared in section 2 into the saucepan & whisk to combine. Add remaining ingredients to the pan & stir.

Let the mixture simmer for about 40-----50 minutes or until sauce has reduced by about � and is thick & syrupy.
