Lenny's Pastry Cream

Ingredients:

4 cups 1/2 and 1/2 or milk
10 to 12 egg yolks
11/4 cup sugar
3/4 cup flour
1 teaspoon vanilla or almond extract
1/8 teaspoon salt

 

Preparation:
Heat milk or 1/2 and 1/2 slowly until almost to the boil, turn off heat. In a large bowl add yolks and sugar whisking together until lemon in color, stir in the flour. Add the milk to egg yolk mixture very slowly. Add vanilla or almond extract and salt. Add mixture back to sauce pan and heat until just boiling for a minute. Mixture will thicken up more, then add cream to storage container and cover and chill until ready to use.
